Autumn Vegetable Casserole
nb Root vegetables give a lovely sweetness to this dish. Left in a slow oven or slow cooker, it’s a delicious time-saving meal to come home to.
For your baby: simply remove a portion or two and whiz until as smooth as desired.
To enjoy as a main meal casserole: Serve with brown basmati rice or quinoa; and some green leafy vegetables, for a complete & delicious meal.
To enjoy as soup: whizz the mixture with a stick blender or in your food processor. To each serving, add a swirl of crème fraiche/plain yoghurt and some chopped parsley. Serve with croutons of toasted dark rye bread cut into squares, or mini rice cakes with almond butter (latter over 9 months but not if there is a nut allergy in the family).
Seasoning: you may want to add a little sea salt and black pepper to suit an adult palate.
